Sunday Breakfast: Apple Cider Pancakes with Cinnamon Syrup


Was searching Pinterest this morning for a good Sunday morning breakfast idea and found this little gem, homemade Apple Cider Pancakes with Cinnamon Syrup. It was love at first sight. I mean, who doesn't love the crisp smells and flavors of fall served up in warm buttery pancakes?

Have to admit, making pancakes from scratch is a little out of my wheelhouse, so may have to skip right to the Bisquick. But I'm sure a little adaptation will still make this a Sunday favorite. You can view the entire blog post on the BunsInMyOven blog.

Pancakes

Ingredients
  • 2 cups flour
  • 2 teaspoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/4 cup butter, melted
  • 1/2 cup buttermilk
  • 1/2 cup Greek yogurt
  • 1 cup apple cider
Instructions
  1. Whisk together the dry ingredients in a medium bowl.
  2. In a small bowl, combine all of the wet ingredients and whisk until well combined.
  3. Add the wet ingredients to the dry ingredients and stir until just combined. Batter should still be somewhat lumpy.
  4. Grease a skillet over medium heat and add small batches of batter to the skillet. Cook over medium heat until bubbles form and pop, then flip the pancakes over and continue cooking until the bottom is browned and the center is cooked through. 

Cinnamon Syrup

Ingredients
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 tablespoon flour
  • 1 teaspoon Saigon cinnamon
  • 1 cup water
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
Instructions
  1. In a small sauce pan, stir together the sugars, flour, and cinnamon until combined. Mix in the water and turn the heat to medium. Bring to a rolling boil and boil, stirring occasionally, for about 10 minutes, or until the sauce thickens up a bit.
  2. Remove from the heat and stir in the butter until melted.
  3. Stir in the vanilla extract.
  4. Serve warm.
  5. Store in the fridge and reheat as needed.

Nicole Smith Earns 2013 LPGA Tour Card



DAYTONA BEACH, FLORIDA, September 30, 2012

The dream of one day playing on the LPGA Tour became a reality today for the top-10 players on the season-ending money list in the 2012 Volvik Race for the Card.

This year’s Symetra Tour graduates are, in order of finish:
1. Esther Choe of Scottsdale, Ariz., $55,690
2. Paola Moreno of Cali, Colombia, $50,908
3. Victoria Elizabeth of Dayton, Ohio, $46,565
4. Thidapa Suwannapura of Bangkok, Thailand, $42,884
5. Daniela Iacobelli of Viera, Fla., $41,049
6. Mi Hyang Lee of Incheon, South Korea, $40,882
7. Jenny Gleason of Clearwater, Fla., $38,741
8. Julia Boland of Tamworth, NSW, Australia, $38,447
9. Nicole Smith of Riverside, Calif., $38,004
10. Sara Maude-Juneau of Quebec, Canada, $37,632.

The race began at the season-opening Florida’s Natural Charity Classic and concluded at this week’s Daytona Beach Invitational Presented by Embry-Riddle Aeronautical University. During the 16 events on this year’s schedule, players jockeyed for position all with hopes of landing inside the top-10 today.

This year marked the first year since the Race for the Card was implemented in 1999 that 10 players received fully exempt LPGA Tour cards for next year. From 1999 to 2002, three exemptions were awarded and from 2007-2011, 10 LPGA memberships were awarded with only the top-5 earning fully exempt status.

Also today, the next 10 players on the Tour’s money list who do not already have LPGA Tour status, earned automatic entry into Stage III of the LPGA Qualifying Tournament. The tournament will take place at LPGA International in Daytona Beach, Fla., set for November 28th-December 2nd. Those players, include; Sara Brown of Tucson, Ariz., Jaclyn Sweeney of Bradenton, Fla., Leah Wigger of Louisville, Ky., Jean Chua of Kuala Lumpur, Malaysia, Olivia Jordan-Higgins of Jersey, Channel Islands UK, Megan McChrystal of Stuart, Fla., Kristie Smith of Perth, Australia, Misun Cho of Cheongju, South Korea, Lauren Doughtie of Suffolk, Va., and Hannah Jun of Palm Beach Gardens, Fla.


Join us in congratulating Golf4Her Ambassador Nicole Smith (Big Break Ireland cast memeber) on earning a spot on the 2013 LPGA Tour.  We can't wait to see her on the big stage!
